Ceylon Cinnamon is a spice made from the bark of the Cinnamomic verum tree, which is a tiny tree. Cinnamon sticks are formed when the bark dries into strips that twist into rolls. The cinnamon sticks can be used whole or processed to make cinnamon powder.
Most of the cinnamon on the market is made from less expensive inferior cinnamon species such as Cassia, Kornite, and Saigon, which have a spicy bitter or pungent flavor, a dark brown hue, and a strong scent. Ceylon Cinnamon, on the other hand, has a delicate, sweet perfume, a moderate sweet taste, and a light to medium reddish-brown hue.
